Keeping the Corps Properly Fueled

Sonneborn Mess Hall is maintained by Fishburne Military School and operated by Marquis Services, Inc. Because Marquis is a small, family-owned, Virginia-based company, the Food Services Director at FMS has the flexibility to design the menu to cater to the tastes of our Cadet Corps.

Ingredients are locally sourced whenever possible and Marquis strives to keep the menu fresh, fun and nutritious. Special events such as Chinese New Year, Fourth of July picnics, Awards Ceremony steak dinners, Mardis Gras and more are celebrated festively with special decorations as well as healthy and delicious fare.

Entrees at FMS are designed by Marquis in accordance with four key principles:

-Every day we use as many fresh vegetables as possible (depending upon season).
-We love to use fresh herbs!
-We like our meat fresh, not frozen!
-We like to make our food from scratch!

In addition to specially crafted entrees for each meal, DAILY offerings include:

Breakfast
Cold cereals – 3 types such as granola, Frosted Flakes, Cherries, Pops, Fruit Loops, Apple Jacks
Hot cereal – 1 each morning such as oatmeal, cream of wheat, grits
Fresh whole fruit
Fresh cut fruit
Yogurt – strawberry, blueberry, vanilla
Cottage cheese
Assorted breads and bagels – with choices of butter, cream cheese, grape jelly, strawberry jam, apple butter, peanut butter, Nutella

Lunch
Salad bar – featuring 2 different types of lettuce and 16 items on the bar
At least 1 Soup of the Day – such as lentil, Tuscan, chicken tortilla, ginger chicken, Indian curry, Thai, chicken noodle
Fresh whole fruit
Rotating side dishes (depending upon season and availability) – such as Broccoli salad, fiesta corn salad, Chicken salad with grapes and pecans, pasta salads, spinach and strawberries, anti-pasta salads
Made-to-Order Deli Bar with assorted breads and wraps – including ham, turkey, beef, (none of these cold cuts have nitrates), peanut butter, butter, grape jelly, strawberry jam, apple butter, hummus, egg salad, pimento cheese, provolone, Swiss, American, pepper jack, and American white; with lettuce tomato, onion, dressings and pickles to choose from.

Dinner
Salad bar – featuring 1 kind of lettuce and 10 items
Whole wheat and white bread – with choices of peanut butter, grape jelly, strawberry jam, butter
Fresh fruit (whole)
Delicious dessert – such as brownies, puddings, ice cream, cakes.
